Baked lotus root snack
Lotus roots are probably my all time favorite root vegetable. Not only they are super healthy (lots of fiber, full of vitamins and minerals), but also they are so tasty and have a subtle crunch even after cooking. In my family, we can literally eat this snack for main meal if there are enough. Here is my favorite way to cook this nutritious vegetable:
- 500 g fresh lotus roots
- 1/2 C Corn starch for dusting
- 4Tbs Sesame oil
- sea salt
- toasted nori ( toasted seaweed sheet)
Peel and slice lotus roots in 1/2 cm thick slices then immerse them into cold water to prevent discoloration. Rinse and dry the lotus root slices with paper towels. Dust cornstarch on both sides of the lotus slices. Arrange them on baking sheets, using a pastry brush to apply sesame oil on both sides of the lotus slices. Bake them in a preheated oven at 400F for about 15′ or until just lightly brown at the edge. Sprinkle with sea salt and smashed nori sheet right after come out of the oven. Enjoy!
