Perfect dinner-Fish Piccata, kale salad, and pearl couscous

It’s the fist time I felt so satisfied about a non-asian meal I put together. Fish piccata was served with kale salad, and pearl couscous for our dinner last weekend. They were so tasty and complementing each other so well that I made again for our guests the next day. Perfect summer dishes! And easy too. Here is how:

Fish Piccata:

Ingredients:

  • 2 tablespoons olive oil
  • 4 small tilapia fillets
  • Salt and black pepper
  • 1/4 cup flour
  • 1/4 cup white wine
  • 1 lemons, juiced
  • 2 tablespoons capers
  • 2 tablespoons butter
  • 2 tablespoons chopped fresh parsley

Directions
Heat the olive oil in a large saute pan over medium-high heat. While the pan is heating, blot the fish dry with paper towels and season with salt and pepper. Dredge in the flour, shaking off any excess. Saute the fish in the oil until just cooked through, about 4 minutes, flipping halfway through. Remove the fish to a platter. Deglaze the pan with the white wine, whisking for about 1 minute. Add the lemon juice and capers and stir. Add the butter and stir or whisk to incorporate to bring the sauce together. Pour onto the fish and garnish with the chopped parsley.

Kale salad with pear:

Ingredients:

  • 1 bunch of kale (stalks removed and discarded, leaves thinly sliced)
  • 1 lemon, juiced
  • 1/4 cup extra-virgin olive oil
  •  salt and black pepper
  • 2 teaspoons honey
  • 1 large pear, sliced
  • 3 Tbs toasted sliver almond

Directions

In large serving bowl, add the kale, half of lemon juice, 1 Tbs olive oil and a little salt. Massage until the kale starts to soften and wilt, about 2 minutes. Set aside while you make the dressing. In a small bowl, whisk remaining lemon juice with the honey, and ground black pepper. Stream in the remaining of olive while whisking until a dressing forms. Taste to adjust. Mix in the sliced pear to prevent it from browning. Pour the dressing and pear over the kale, add almond. Toss and serve.

Pearl couscous:

I bought a package of pearl couscous from Trader Joe’s, and cooked according to the package’s instruction.
